It was a good food night in la Casa de Hall. We made some great, fresh summer pickings that glorified the season and satisfied our taste buds - not to mention our bellies.
First, we had some whipped feta on garlic bagel chips. Whipped feta is new to me and oh-so-easy. Put 8 oz of room temperature feta in the food processor until it's small crumbles and then add 3 oz of cream cheese. Blend until smooth (3+ minutes). Told you - easy peasy.
A couple of nights ago I harvested my watermelon radish and they are so cute! Look look look...
After slicing them on the mandolin slicer (I use a little handheld OXO ) we threw them in a hot buttered pan with a little bit of salt and voila - instant, delicious radishes. It is now my favorite way to eat them, but let's face it, butter and salt can make anything taste good.
And for the main event I made Rodrigo-style fish. I cut out the flour for breading the fish and just seared the tilapia in a pan with hot oil. Once cooked through both sides, top with the sauce, and again - a delicious and easy summer meal!
The sauce:
1/4 c freshly squeezed lime juice
1/4 c olive oil
1 Tb soy sauce
1/2 c thinly sliced scallions
1/2 c chopped cilantro
In Argentina, they have a saying - panza llena, corazón contento - which means "full belly, happy heart." How very, very true.
